The sweet mollete or poblano mollete is a traditional dessert from Puebla that accompanies the Chiles en Nogada.
The mollete is a fluffy artisan bread, similar to a muffin, made from eggs, filled with pastry cream with a touch of coconut, wrapped in rum and covered with a thin layer of pumpkin seed candy. The muffin is covered with a sugar-based glaze.
Its elaboration coincides with the Chiles en Nogada season, but there is no historical evidence that they are related. Some sources indicate that the appearance of the mollete took place in the kitchen of the nuns of Santa Clara, who are also known for making other traditional sweets such as sweet potatoes.
The mollete is made during the months of July, August and September as a pastry tradition in Puebla. This sweet stands out for its rich aroma of coconut and its notes of wine.
