From the last weeks of July to mid-September, the emperor dish of Mexican cuisine makes its appearance. All the ingredients are ready to crown a special season of flavor in Puebla.

When the Poblano peppers (or also called seasonal peppers) appear in our markets in Puebla, together with fruits such as pears, peaches, apples, as well as the walnut called " de Castilla" and the red pomegranate, it invites us to cook one of the Mexican dishes that are the delight of all of Mexico.
A little of History
It's said that when the Independence of Mexico was consummated by the insurgent leader Agustín de Iturbide who, under the famous flag of the Three Guarantees symbolized in green, white and red, arrived in Puebla so that the city would be the first to swear independence. The city was decorated with decorated with ribbons and ornaments based on the colors of this tricolor flag to receive the liberating army and its leader. And some ladies of high society together with the Augustinian Recollect nuns prepare a sumptuous banquet for such an important event. But the star dish would be a poblano pepper stuffed with fruit, coated and seasoned with a special walnut sauce that was made by the nuns.
Emperor is born
Chiles en Nogada were presented and tasted by Agustin de Iturbide and his entourage with the bright colors of parsley leaves (green), the walnut sauce (white) and the pomegranate (red). The dish was a success and pleased everyone. Afterward, Agustín de Iturbide continued his journey to Mexico City to establish the new government under a provisional cabinet. But a short time later, Agustin de Iturbide was crowned Emperor of Mexico. This is how the emperor of Mexican dishes was born.
